Easy Vegetarian Dishes





If you think being vegetarian can mean putting twice the effort into making a meal? think again! I have put together a few recipes for those out there with a busy lifestyle who are really committed or want to commit to a healthier lifestyle of eating.






Recipe One: The Vegetarian Burrito



Ingredients:

  • Flour tortilla
  • 1/4 cup cheddar cheese
  • 1/4 kidney beans
  • 2 tablespoons guacamole
  • Tomato Salsa
  • Sour cream
  • Cabbage (optional)





Method:

  1. Heat tortilla in a large saucepan for about 30 seconds, and transfer onto a large cutting board. Add cheese to the centre of the burrito, ensuring that a border is left. 
  2. Add beans, Guacamole and Salsa (ensure that the beans have been drained and heated before adding to the tortilla to prevent from making it soggy).
  3. Fold the top of the burrito down and in towards the centre.
  4. Immediately wrap the burrito in foil tightly and firmly. Ensure to serve straight away. 

Recipe Two: Singapore Noodles With Tofu



                                                                                 
Ingredients:


  • 100g fine rice
  • 140g firm tofu
  • 2tbsp sunflower oil
  • 3 spring onions
  • 1 red pepper
  • fresh ginger 
  • 100g beansprouts
  • 1 tbsp tikka masala paste
  • 2 tsp soy sauce
  • Roughly chopped coriander for garnish purposes 
  • Cabbage






Method:

  1. Place noodles in a bowl and pour over boiling water to cover. Leave for 4 minutes, then drain and rinse under running water until cold. Drain well and cut the length of the noodles in half using scissors. 
  2. Rinse tofu in cold water and cut into desired size (smaller size will work well). Pat dry. Heat one tbsp of oil in a fry pan and stir fry the tofu for 2-3 minutes until golden brown. Drain on kitchen paper. 
  3. Add remaining oil to the WOK and heat up. Add the spring onions, ginger, pepper, cabbage and beansprouts the stir-fry for about 1 minute. Add the noodles and stir. 
  4. Blend together the masala paste and soy sauce and add to the wok and stir until everything is well blended. Garnish with coriander and serve immediately.
